Masala Jowar Roti with Ajwain, Coriander & Psyllium Husk

It's made with jowar (sorghum flour), fresh coriander, ajwain (carom seeds), and now includes psyllium husk for extra softness and binding—making it easier to roll and digest. Perfect for breakfast, lunch, or dinner!
📝 Ingredients (Makes 4–6 Rotis)

1 cup Jowar flour (sorghum flour)

1 tbsp psyllium husk (isabgol)

¼ cup finely chopped coriander (cilantro)

½ tsp ajwain (carom seeds)
-
½ tsp cumin seeds (optional)
-
1 finely chopped green chili (optional)
-
½ tsp salt (or to taste)

¾ cup warm water (or as needed)

Ghee or oil (for cooking)
🍴 Instructions
Step 1: Activate the Psyllium Husk

In a small bowl, mix psyllium husk with warm water (about ¼ cup).

Let it sit for 2–3 minutes until it forms a gel-like consistency.
Step 2: Make the Dough

In a mixing bowl, combine jowar flour, coriander, ajwain, cumin, green chili, and salt.

Add the psyllium gel and start mixing. Add more warm water gradually to knead into a soft, pliable dough.

Cover with a damp cloth and let it rest for 5–10 minutes.
Step 3: Shape the Rotis

Take a portion of dough and roll it between your palms into a ball.

Place it between two sheets of parchment paper or use light flour dusting to roll into a flat circle.

The psyllium will help the dough hold together without cracking.
Step 4: Cook the Rotis

Heat a tawa or skillet on medium.

Place the roti on the pan and cook for 30–40 seconds on one side.

Flip, press gently with a spatula, apply a little ghee or oil, and cook until golden on both sides.
